The Story of Bocconato Trattoria
According to the playwright Neil Simon, there are two laws in the universe. The law of gravity and everyone likes Italian food. Everyone does like Italian food, but what is it exactly? For us at Bocconato, our interpretation of authentic cuisine began with Chef Giovanni's family roots and extended through a life of adventure and many trips to Italy. Giovanni's grandparents came from the region of Toscana and Piemonte and passed down a heritage steeped in both winemaking and culinary finesse. As an adult, he sledded the Alaskan wilderness while living completely off the land, practiced Oriental medicine and was also a private physician and chef to one of the world's greatest spiritual leaders of our time. Throughout his lifetime, Chef Giovanni's interest in cuisine and wine led him to study with chefs and winemakers throughout the world.
As a husband and wife team, we've traveled extensively throughout each of the northern and central regions of Italy gathering recipes from chefs, winemakers, grandmothers, families and working farm owners. We appreciate how deeply Italian food is connected to culture, family, history, the land, and historic trade routes. We understand just how Italian food is connected to the soul.
Italian cuisine is always about using local, seasonal, and fresh ingredients. It's about respecting all of the elements of a recipe's history. Italian recipes are simple, often using just a few ingredients to create layers of flavor and exceptional taste. Bocconato, in Italian, is a 'big mouthful'. We believe that clean simple ingredients should be crafted to create layered flavors that create an experience and memory with the senses.
We offer you our interpretation of what we consider to be some of the best cuisine in the world using fresh, seasonal ingedients (and local whenever possible)...combining them in a simple way, with passion and soul...the way Italians have been doing it for centuries. It is our mission to remind our guests that sharing food and wine is a daily celebration. We hope to create for you a memorable dining experience with family and friends. Buon appetito!
